Arrowroot
is also a
source of food for us to eat as the starchy corm has a high content of carbohydrate?
The corms need to be peeled first and then boiled until soft. I usually make
the cooked arrowroot into a cake by adding cottage cheese, palm sugar, eggs and
vanilla and whiz it through a food processor then pour into a greased baking
dish and bake until firm. If this doesn’t take your fancy you can throw the
whole plant, corms and all to the pigs and they will demolish the whole lot!
The arrowroot will need to be 12 to 18 months old to have the starch matured
into the corms. Any younger than this and the corms will taste watery. When the
arrowroot is too old, the starches will
have turned to cellulose and the corms won’t soften with cooking
